I started this recipe because my sister fell in love with a vodka spaghetti sauce at the grocery store and was paying $6.00 a jar for it which I thought was insane! I had to show her that not only was spaghetti sauce easy to make it was much more inexpensive than that. I served my version for dinner with friends one night and it was a hit. One friend told me she was sure she wouldn’t eat her whole plateful. I told her we did doggy bags but not only did she eat it all and then stare longingly at the empty plate …. she asked for the recipe as well.
Creamy Spaghetti Sauce
A mildly creamy, flavorful, spaghetti sauce.
1 – 29 oz can of Organic Tomato Sauce
1 – 26.4 box of Organic POMI chopped tomatoes
2 Tbsp Italian seasoning
2 Tbsp Organic Superfood Greens (optional)
3/4 Cup Raw Organic Cashews
2 Tbsp Organic Brown Sugar
Add all ingredients EXCEPT cashews to a large saucepan. Stir well. Cover and simmer on medium low for about 20 minutes. To a blender add 1 cup of the sauce from your saucepan and your cashews. Blend well. Add the blended cashew mixture back into the rest of the sauce. Stir well. Serve over your favorite pasta.
